
Ingredients:
- 1 lb (450g) ground lamb or beef
- 1 onion, finely chopped
- 2 carrots, diced
- 1 cup frozen peas
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 cup beef or vegetable broth
- 2 tablespoons Worcestershire sauce
- 2 tablespoons olive oil
- 4 cups mashed potatoes
- Salt and pepper to taste
- Chopped fresh parsley (optional, for garnish)
Instructions:
- Prepare the Filling:
- In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until they become translucent.
- Add diced carrots and cook for a few minutes until they start to soften.
- Add minced garlic and ground lamb/beef. Cook until the meat is browned and cooked through.
- Stir in tomato paste and cook for a minute to incorporate.
- Pour in the beef or vegetable broth and Worcestershire sauce. Bring to a simmer and let it cook for about 10-15 minutes until the mixture thickens.
- Stir in frozen peas and cook for an additional 2 minutes. Season with salt and pepper to taste. Remove from heat.
- Assemble the Pie:
- Preheat the oven to 400°F (200°C).
- Transfer the meat and vegetable mixture into a baking dish. Spread it out evenly.
- Add Mashed Potatoes:
- Spoon the mashed potatoes over the meat mixture. Use a fork to spread the mashed potatoes evenly and create a decorative pattern on top.
- Bake the Pie:
- Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the mashed potatoes are golden brown on top.
- Serve:
- Remove the Shepherd’s Pie from the oven and let it cool slightly before serving.
- Garnish with chopped fresh parsley, if desired.
