Chicken Tikka Masala Recipe

Ingredients:

For the Chicken Tikka:

  • 1 pound (450g) boneless chicken, cut into bite-sized pieces
  • 1/2 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt to taste

For the Sauce:

  • 2 tablespoons oil or ghee
  • 1 large onion, finely chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream or coconut milk
  • 1 teaspoon sugar
  • Salt to taste
  • Chopped cilantro for garnish

Instructions:

  1. In a bowl, mix together yogurt, lemon juice, ginger paste, garlic paste, cumin, coriander, turmeric, paprika, cayenne pepper, and salt. Add chicken pieces and marinate for at least 1 hour, preferably longer.
  2. Preheat the oven to 400°F (200°C). Thread marinated chicken onto skewers and place them on a baking sheet. Bake for about 15-20 minutes or until the chicken is cooked through and slightly charred.
  3. In a large skillet, heat oil or ghee over medium heat. Add chopped onions and sauté until they turn golden brown.
  4. Add ginger paste, garlic paste, ground cumin, ground coriander, turmeric, paprika, and cayenne pepper to the skillet. Cook for a couple of minutes until fragrant.
  5. Pour in the crushed tomatoes and cook for about 5-7 minutes, allowing the flavors to blend.
  6. Reduce the heat to low and add the heavy cream or coconut milk. Stir well and let the sauce simmer for another 5 minutes.
  7. Add sugar and salt to taste, adjusting the seasoning as needed.
  8. Gently add the baked chicken tikka pieces to the sauce and let them simmer in the sauce for a few minutes to absorb the flavors.
  9. Garnish with chopped cilantro before serving.
