
Ingredients:
For the Chicken Tikka:
- 1 pound (450g) boneless chicken, cut into bite-sized pieces
- 1/2 cup plain yogurt
- 1 tablespoon lemon juice
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt to taste
For the Sauce:
- 2 tablespoons oil or ghee
- 1 large onion, finely chopped
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 can (14 oz) crushed tomatoes
- 1 cup heavy cream or coconut milk
- 1 teaspoon sugar
- Salt to taste
- Chopped cilantro for garnish
Instructions:
- In a bowl, mix together yogurt, lemon juice, ginger paste, garlic paste, cumin, coriander, turmeric, paprika, cayenne pepper, and salt. Add chicken pieces and marinate for at least 1 hour, preferably longer.
- Preheat the oven to 400°F (200°C). Thread marinated chicken onto skewers and place them on a baking sheet. Bake for about 15-20 minutes or until the chicken is cooked through and slightly charred.
- In a large skillet, heat oil or ghee over medium heat. Add chopped onions and sauté until they turn golden brown.
- Add ginger paste, garlic paste, ground cumin, ground coriander, turmeric, paprika, and cayenne pepper to the skillet. Cook for a couple of minutes until fragrant.
- Pour in the crushed tomatoes and cook for about 5-7 minutes, allowing the flavors to blend.
- Reduce the heat to low and add the heavy cream or coconut milk. Stir well and let the sauce simmer for another 5 minutes.
- Add sugar and salt to taste, adjusting the seasoning as needed.
- Gently add the baked chicken tikka pieces to the sauce and let them simmer in the sauce for a few minutes to absorb the flavors.
- Garnish with chopped cilantro before serving.
