Chicken Cobbler Recipe

This recipe combines tender chicken and savory vegetables topped with a fluffy biscuit-like crust:

Ingredients:

For the Chicken Filling:

  • 2 cups cooked chicken, diced or shredded
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Cobbler Topping:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1/2 cup milk
  • 1/4 cup shredded cheddar cheese (optional)

Instructions:

For the Chicken Filling:

  1. In a large skillet or saucepan, melt the butter over medium heat.
  2. Add the chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables begin to soften, about 5 minutes.
  3. Sprinkle the flour over the vegetables and stir to coat them evenly. Cook for another 2 minutes to remove the raw flour taste.
  4. Slowly whisk in the chicken broth and milk, ensuring there are no lumps. Stir in the dried thyme, salt, and pepper.
  5. Cook the mixture, stirring constantly, until it thickens and comes to a gentle simmer.
  6. Add the cooked chicken, frozen peas, and frozen corn. Stir to combine. Simmer for a few more minutes until everything is heated through.

For the Cobbler Topping:

  1. In a mixing bowl, whisk together the flour, baking powder, and salt.
  2. Add the cold, cubed butter and use a pastry cutter or your fingers to work it into the flour mixture until it resembles coarse crumbs.
  3. Pour in the milk and stir until just combined. Don’t overmix.

Assembling and Baking:

  1. Preheat your oven to 375°F (190°C).
  2. Transfer the chicken filling mixture to a greased 9×13-inch baking dish.
