Lemon Chicken Romano Recipe

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • Salt and black pepper to taste
  • 2 eggs
  • 1 cup grated Romano cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter

For the Lemon Sauce:

  • 1/2 cup chicken broth
  • 1/2 cup freshly squeezed lemon juice
  • Zest of one lemon
  • 2 cloves garlic, minced
  • 1/4 cup heavy cream
  • 2 tablespoons capers (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Start by preparing the chicken breasts. Place them between two sheets of plastic wrap and use a meat mallet to gently pound them to an even thickness, about 1/2 inch thick.
  3. In a shallow dish, combine the flour, salt, and black pepper. In another dish, beat the eggs. In a third dish, place the grated Romano cheese.
  4. Dredge each chicken breast in the flour mixture, ensuring it’s evenly coated. Then, dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the Romano cheese, pressing the cheese onto the chicken to adhere.
  5. Heat the olive oil and butter in an oven-safe skillet over medium-high heat. Once the butter is foamy, add the chicken breasts. Cook for about 2-3 minutes per side, until they are golden brown and crispy.
  6. Transfer the skillet to the preheated oven and bake the chicken for about 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  7. While the chicken is baking, prepare the lemon sauce. In a separate saucepan, combine the chicken broth, lemon juice, lemon zest, minced garlic, and optional capers. Bring to a simmer and let it cook for about 5 minutes, allowing the sauce to reduce slightly.
  8. Reduce the heat to low and stir in the heavy cream. Simmer for another 2-3 minutes until the sauce thickens. Season with salt and black pepper to taste.
  9. Once the chicken is done baking, remove it from the oven and let it rest for a few minutes.
  10. To serve, spoon the lemon sauce over the chicken breasts and garnish with chopped fresh parsley.
