- Leafy greens (spinach, bok choy, Napa cabbage)
- Bean sprouts
- Noodles (udon, rice noodles, or egg noodles)
For the dipping sauce:
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- 1 teaspoon chili oil (optional, for extra spice)
- Chopped green onions and cilantro for garnish
Instructions:
- In a large pot, combine the chicken or vegetable broth, minced garlic, sliced ginger, soy sauce, oyster sauce, Shaoxing wine, sesame oil, and Sichuan peppercorns (if using). Bring the broth to a gentle simmer over medium heat. Let it simmer for about 15-20 minutes to allow the flavors to infuse.
- While the broth is simmering, arrange the hot pot ingredients on a platter for easy access during the meal.
- Set up the hot pot in the center of the dining table and place it on a portable stove or a heating element.
- Each diner can select their desired ingredients and start cooking them in the simmering broth. For thinly sliced meats and seafood, they cook quickly and can be swirled in the broth for a few seconds. For vegetables and noodles, allow them to cook until tender.
- As the ingredients cook, guests can create their own dipping sauce by combining soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, and chili oil (if using).
