Gazpacho Recipe

Ingredients:

  • 4 ripe tomatoes
  • 1 cucumber, peeled and seeded
  • 1 red bell pepper, seeded
  • 1 small red onion
  • 2 cloves of garlic
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper (adjust to taste)
  • Optional toppings: chopped cucumber, diced tomatoes, croutons, or fresh herbs

Instructions:

  1. Roughly chop the tomatoes, cucumber, red bell pepper, and red onion.
  2. Place the chopped vegetables and garlic cloves in a blender or food processor.
  3. Blend the ingredients until you achieve a smooth consistency.
  4. Add the olive oil, red wine vinegar, salt, and black pepper to the blender. Blend again to incorporate the flavors.
  5. Taste the gazpacho and adjust the seasoning as needed.
  6. Transfer the gazpacho to a bowl or container and refrigerate for at least 1 hour to chill and allow the flavors to meld.
  7. Before serving, give the gazpacho a good stir. You can also strain it through a fine-mesh sieve if you prefer a smoother texture.
  8. Serve the gazpacho chilled in bowls or glasses. Optionally, garnish with chopped cucumber, diced tomatoes, croutons, or fresh herbs.
