Gelato Recipe

Ingredients:

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1 teaspoon pure vanilla extract
  • Additional flavorings (e.g., chocolate, fruit, nuts) as desired

Instructions:

  1. In a medium saucepan, combine the whole milk and heavy cream. Heat the mixture over medium heat until it reaches a simmer. Remove from heat.
  2. In a separate mixing bowl, whisk together the granulated sugar and egg yolks until well combined and slightly thickened.
  3. Slowly pour about 1/2 cup of the hot milk mixture into the egg mixture while whisking continuously. This tempers the eggs and prevents them from curdling.
  4. Gradually pour the tempered egg mixture back into the saucepan with the remaining hot milk mixture, whisking constantly.
  5. Place the saucepan back on the stove over medium-low heat. Cook the mixture, stirring constantly with a wooden spoon or spatula, until it thickens and coats the back of the spoon. This usually takes about 5-7 minutes. Be careful not to let it boil.
  6. Remove the saucepan from heat and stir in the vanilla extract.
  7. Allow the mixture to cool for a few minutes, then transfer it to a covered container and refrigerate for at least 4 hours or overnight. This step is crucial for the best texture and flavor.
  8. Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  9. If desired, add your preferred flavorings (e.g., melted chocolate, fruit puree, chopped nuts) during the last few minutes of churning.
  10. Transfer the churned gelato to a lidded container and freeze for an additional 2-4 hours to firm up.
  11. Serve your homemade gelato in bowls or cones and enjoy!
