Semolina Halva Recipe

Ingredients:

  • 1 cup semolina
  • 1 cup sugar
  • 1/2 cup ghee or clarified butter
  • 2 cups water
  • 1/4 cup chopped nuts (such as almonds, cashews, or pistachios)
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • Raisins for garnish (optional)

Instructions:

  1. Heat a deep saucepan or a heavy-bottomed pan over medium heat.
  2. Add the ghee or clarified butter to the pan and let it melt.
  3. Once the ghee is melted, add the semolina to the pan and roast it on medium heat, stirring continuously. Roast until the semolina turns golden brown and releases a nutty aroma. This step is crucial to develop the flavor of the halva.
  4. In a separate saucepan, bring the water to a boil.
  5. Slowly pour the boiling water into the roasted semolina, stirring continuously to avoid lumps. Be cautious as the mixture will sizzle and may splatter.
  6. Reduce the heat to low and let the semolina cook in the water, stirring constantly to prevent sticking or lump formation. Cook for about 5-7 minutes until the mixture thickens.
  7. Add the sugar to the pan and continue stirring until the sugar dissolves completely and the mixture becomes smooth.
  8. Add the chopped nuts, cardamom powder, and saffron strands (if using). Mix well to incorporate the flavors evenly.
  9. Cook the halva for another 2-3 minutes, stirring continuously until it reaches a thick, pudding-like consistency and starts to leave the sides of the pan.
  10. Remove the pan from heat and let the halva rest for a few minutes to cool slightly.
  11. Garnish the halva with raisins if desired.
  12. Serve the semolina halva warm or at room temperature as a delightful dessert or sweet treat.
