- 1/2 cup ghee or clarified butter
- 2 cups water

- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- Raisins for garnish (optional)
Instructions:
- Heat a deep saucepan or a heavy-bottomed pan over medium heat.
- Add the ghee or clarified butter to the pan and let it melt.
- Once the ghee is melted, add the semolina to the pan and roast it on medium heat, stirring continuously. Roast until the semolina turns golden brown and releases a nutty aroma. This step is crucial to develop the flavor of the halva.
- In a separate saucepan, bring the water to a boil.
- Slowly pour the boiling water into the roasted semolina, stirring continuously to avoid lumps. Be cautious as the mixture will sizzle and may splatter.
- Reduce the heat to low and let the semolina cook in the water, stirring constantly to prevent sticking or lump formation. Cook for about 5-7 minutes until the mixture thickens.
- Add the sugar to the pan and continue stirring until the sugar dissolves completely and the mixture becomes smooth.
- Add the chopped nuts, cardamom powder, and saffron strands (if using). Mix well to incorporate the flavors evenly.
- Cook the halva for another 2-3 minutes, stirring continuously until it reaches a thick, pudding-like consistency and starts to leave the sides of the pan.
- Remove the pan from heat and let the halva rest for a few minutes to cool slightly.
- Garnish the halva with raisins if desired.
- Serve the semolina halva warm or at room temperature as a delightful dessert or sweet treat.
