Green Goddess Salad Recipe

Ingredients:

  • 6 cups mixed salad greens (such as lettuce, spinach, or arugula)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/2 avocado, diced
  • 1/4 cup sliced green onions
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh tarragon (optional)
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, avocado, green onions, parsley, basil, chives, and tarragon (if using).
  2. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, minced garlic, salt, and pepper until well combined. This is your Green Goddess dressing.
  3. Drizzle the Green Goddess dressing over the salad mixture and toss gently to coat all the ingredients evenly.
