
Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 1 pound (450g) ground beef or a mixture of beef and pork
- 1 can (14 ounces) crushed tomatoes
- 1 can (6 ounces) tomato paste
- 1/2 cup red wine (optional)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves, torn (for garnish, optional)
Instructions:
- Heat olive oil in a large saucepan over medium heat. Add the onion and garlic, and sauté until they become translucent and fragrant.
- Add the carrot and celery to the pan, and cook for a few minutes until they soften.
- Add the ground beef (or beef and pork mixture) to the pan, breaking it up with a spoon. Cook until the meat is browned and cooked through.
- Stir in the crushed tomatoes and tomato paste, ensuring they are well combined with the meat and vegetables.
- If using red wine, pour it into the saucepan and let it simmer for a few minutes to allow the alcohol to evaporate.
- Sprinkle in the dried oregano and basil, and season with salt and pepper to taste. Stir well.
- Reduce the heat to low, cover the saucepan, and let the Sugo simmer for at least 1 hour to allow the flavors to meld together. You can simmer it for longer if you prefer a richer taste.
- Serve the Sugo over your favorite pasta, such as spaghetti or penne. Garnish with torn fresh basil leaves, if desired.
