Sugo Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 1 pound (450g) ground beef or a mixture of beef and pork
  • 1 can (14 ounces) crushed tomatoes
  • 1 can (6 ounces) tomato paste
  • 1/2 cup red wine (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves, torn (for garnish, optional)

Instructions:

  1. Heat olive oil in a large saucepan over medium heat. Add the onion and garlic, and sauté until they become translucent and fragrant.
  2. Add the carrot and celery to the pan, and cook for a few minutes until they soften.
  3. Add the ground beef (or beef and pork mixture) to the pan, breaking it up with a spoon. Cook until the meat is browned and cooked through.
  4. Stir in the crushed tomatoes and tomato paste, ensuring they are well combined with the meat and vegetables.
  5. If using red wine, pour it into the saucepan and let it simmer for a few minutes to allow the alcohol to evaporate.
  6. Sprinkle in the dried oregano and basil, and season with salt and pepper to taste. Stir well.
  7. Reduce the heat to low, cover the saucepan, and let the Sugo simmer for at least 1 hour to allow the flavors to meld together. You can simmer it for longer if you prefer a richer taste.
  8. Serve the Sugo over your favorite pasta, such as spaghetti or penne. Garnish with torn fresh basil leaves, if desired.
