- 2 cups Arborio or Carnaroli rice
- 6 cups chicken or vegetable broth
- 1 small onion, finely chopped
- 2 tablespoons butter
- 1/2 cup grated Parmesan cheese

Instructions:
- In a large saucepan, heat the chicken or vegetable broth over medium heat. Keep it simmering while you prepare the risotto.
- In a separate large, heavy-bottomed pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the rice to the pot and stir it well, making sure each grain is coated with the butter. Toast the rice for a couple of minutes until it turns slightly translucent around the edges.
- If using saffron, dissolve it in a small amount of warm broth or water and add it to the pot. This will give the risotto its signature yellow color. Stir well.
- Pour in the white wine and cook until it has been absorbed by the rice, stirring constantly.
- Begin adding the simmering broth to the rice, one ladleful at a time. Stir the rice continuously until the broth has been absorbed before adding the next ladleful. Continue this process, ensuring the rice is always moist but not drowning in broth. This gradual addition and stirring process will help release the starches from the rice, creating a creamy texture.
- Keep adding the broth and stirring until the rice is cooked al dente, which means it should have a slight bite to it. This usually takes around 20-25 minutes. You may not need to use all of the broth, so taste the rice as you go to determine the desired texture.
- Once the rice is cooked, remove the pot from the heat. Stir in the grated Parmesan cheese until it melts and combines with the rice. Season with salt and pepper to taste.
- Let the risotto rest for a few minutes before serving. This allows the flavors to meld together and the risotto to achieve its perfect creaminess.
- Serve the Risotto alla Milanese hot, and garnish with some additional grated Parmesan cheese, if desired. Enjoy!
